What to Look For
PFOA-free is now standard; PTFE-free is the upgrade. All modern nonstick coatings on reputable pans are PFOA-free (the problem chemical phased out in 2013). Higher-end pans now also avoid PTFE in favor of ceramic or hybrid coatings, which trade slightly worse nonstick performance for fewer health questions.
Heavier pans last longer. Thin nonstick pans warp on the burner, which breaks the coating bond. A pan that weighs 2.5 lbs or more for a 10-inch size will retain its flat surface and nonstick coating for much longer than a 1.5 lb featherweight.
