What to Look For

Anodized aluminum is the right material. It conducts heat like raw aluminum but won't react with acidic batters (lemon cake, buttermilk) or pit over time. Fat Daddio's anodized pans are the professional standard.

Frequently Asked Questions

Do I need to grease cake pans even with parchment?

Yes for the sides. Parchment handles the bottom; the sides need a thin film of softened butter dusted with flour (or baking spray). Otherwise the cake sticks to the pan walls and tears when you invert it.

Why does my cake dome in the middle?

Usually because the pan is too small or the oven is too hot. Domed cakes happen when the outside sets before the inside fully rises. Solution: use a pan with at least 1" of capacity above your batter line, and consider lowering oven temp by 25°F.

Are nonstick cake pans worth it?

Not really. The nonstick coating shortens pan life and you still need to grease and flour for clean release. Plain anodized aluminum lasts longer, releases just as cleanly with proper prep, and doesn't have coating-wear concerns.
